Super Easy, Delicious, Healthier Chicken Parmesan

I found a delicious no-breadcrumbs Chicken Parm recipe on the internet awhile ago and over the years have simplified it down into a super fast, yet delicious go-to for my family. I am not much of a cook (meaning I don't really enjoy spending long hours in the kitchen), but I do appreciate good quality food and think it is really important for my daughter to eat real, unprocessed, organic foods. So, I cook in a way that makes sense for me — I use good quality ingredients, the recipes have to be super low maintenance and the meal must be delicious for everyone (my husband loooooves this dish).

Serves 2

INGREDIENTS

  • 4 chicken breasts (organic, free range, certified humane, if you can)
  • extra virgin olive oil
  • himalayan pink salt (if you don't have this you can use sea salt or salt, but I encourage you to buy some, it seriously adds flavor to everything and they say it contains more minerals, etc.)
  • pepper
  • 1 package fresh mozzarella 
  • 1 jar organic pasta sauce (make sure it features your favorite herbs, I like garlic and basil, and contains no added sugar)

DIRECTIONS

  • pre heat oven to 450° F
  • rinse chicken breasts and place in a glass oven dish
  • drizzle with olive oil, salt and pepper
  • place in oven, cook for 25 minutes or until cooked through (165°F)
  • while the chicken is cooking slice the fresh mozzarella into thin long slices
  • remove from oven, pour pasta sauce over chicken breasts and top each breast with 1-3 slices of mozzarella
  • replace into the oven and cook until the cheese starts to brown
  • remove from oven, let cool and serve next to your favorite greens
