Coconut Curry Chicken & Cauliflower Rice

Super easy, delicious. low carb dinner option

ingredients:

  • 2 Certified Humane chicken breasts
  • 2 tbsp extra virgin olive oil
  • himalayan pink salt
  • 1 package frozen cauliflower rice
  • 2 cups frozen kale
  • 1 can coconut milk (I use full fat)
  • 4 tbsp green curry paste

instructions:

  1. Heat oven to 425 F, drizzle chicken in olive oil and himalayan pink salt. Place in oven for 25 minutes or until fully cooked.
  2. Drizzle 1 tbsp olive oil in a sauté pan. Add cauliflower rice and kale and cook on medium heat until cooked. 
  3. Remove chicken from oven and chop into 1 inch squares. Add to sauté pan. 
  4. Add coconut milk and curry paste. Simmer for 5-ish minutes.
  5. Enjoy!
