Vegan Eggnog Smoothie

For me eggnog is synonymous with the holidays, but it's not the healthiest drink. This vegan smoothie is full of healthy foods and tastes just as delicious. This smoothie is a bit higher in sugar and fat than I would drink on a day to day, but it's perfect for a holiday treat.

  1. Make flaxseed "eggs" - pour ground flaxseed into a bowl, add water, whisk until gelatinous. Add more water / flaxseed as needed to get the consistency right. 
  2. Add all ingredients into a blender.
  3. Blend until the date pieces are properly blended into the smoothie.
  4. Enjoy!
